HAWAIIAN FRIED RICE PAIRED WITH MAUI RIBS
INGREDIENTS:
- 4 cups jasmine rice, cooked
- 2 garlic scapes, chopped
- 1 1/2 cups pineapple, chopped
- 1/2 cup onion, chopped
- 1/2 cup red bell pepper, chopped
- 1/2 cup green peas
- 1/4 cup green onions, chopped
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp vinegar
- 1 tsp garlic, minced
- 1 tsp ginger, minced
- 1 tsp ground white pepper
- salt to taste
INSTRUCTIONS:
Heat a large skillet on a medium flame. Add olive oil, ginger, and garlic; sauté for a minute. Add the onion and cook until the onions turn translucent. Add in the garlic scapes and bell peppers. Cook for 3-4 minutes, then add the green peas and pineapple. Cook for 2 more minutes. Add the soy sauce, vinegar, white pepper, and salt. Mix well. Add the cooked rice and toss until well combined. Add the green onions, transfer to a plate, and serve while warm.
