PERSIAN KOFTAS AND GREEK SALAD
INGREDIENTS:
- 1.5 lbs of our ground beef
- 1 small onion, minced
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 2 tbsp bread crumbs
- 1/4 tsp allspice
- 1/4 tsp coriander
- 1/4 tsp paprika
- 1/4 tsp chili powder
- salt and fresh pepper, to taste
Salad:
- 2 cucumbers, chopped
- 2 bell peppers, chopped
- 1 red onion, chopped
- 1 pint of cherry tomatoes, halved
- drizzle of olive oil
- 2 tbsp red wine vinegar
- Greek seasoning, to taste
- feta cheese and olives, to taste (optional)
INSTRUCTIONS:
In a large bowl, combine the ground beef, onion, garlic, parsley, bread crumbs, spices, salt, and pepper until evenly blended. Divide into heaping 1/4 cup portions and shape into oval patties. Preheat the grill to high heat. Carefully insert the skewer through the formed meat. Grill for 15 minutes, covered over indirect heat, then finish over a low flame for 3 to 4 minutes on each side, turning occasionally until the meat is no longer pink.
For the salad:
Mix the chopped cucumbers, peppers, and red onions with the halved cherry tomatoes. Add feta and olives if desired. Drizzle with olive oil and red wine vinegar. Sprinkle with Greek seasoning to taste. Mix well and serve chilled.
