STRAWBERRY CRUMBLE BARS
INGREDIENTS:
- 3 cups strawberries, chopped
- 2 cups all-purpose flour
- 2/3 cup unsalted butter, cold and cubed
- 2/3 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tbsp. cornstarch
- 1 tsp. pure vanilla extract
- 1/2 tsp. baking powder
- 1/2 tsp. salt
INSTRUCTIONS:
Preheat your oven to 350°F. Line a 9×9-inch baking pan with parchment paper. In a large bowl, whisk together flour, baking powder, and salt. Add cold butter and use a pastry cutter or wooden spoon. In another bowl, whisk together brown sugar, egg, and vanilla. Gradually add liquid to dry. Press 2/3 of this mixture into the prepared pan.
In a medium bowl, mix strawberries, granulated sugar, and cornstarch. Spread over the crust. Top with the remaining crumble mixture. Bake for 40-45 minutes, until the top is golden brown and the strawberry layer is bubbling. Cool completely, then cut into 1-1/2 inch squares and serve.
